Buffalo Chicken Pizza

So, if you know Bryson and I at all...you know that we LOVE Slab Pizza in Provo. We love so many of their pizzas, but one that we really enjoy is the Buffalo Chicken Pizza. At my baby shower in Colorado, my Mother-in-law made a Buffalo Chicken dip that everyone went crazy for! It was so good! As I was eating it, I realized that it tasted EXACTLY like the topping on the Buffalo Chicken Pizza at Slab! Now, you might be thinking, "I don't like buffalo wings." Yeah, neither do I! In fact, I probably wouldn't touch the things if you paid me. BUT this dip is GOOD! Yum, yum, yum!

So, today I made the dip, made pizza dough, added the two together and voila! I present to you Buffalo Chicken Pizza! It was delicious! For this pizza, I like a thin crust/NY style crust, but feel free to make whatever dough is your favorite.

I got the recipe for Buffalo Chicken Dip from here and just made some thin crust/NY style pizza dough (if you don't have a recipe already, just google it or look it up on allrecipes.com - that's what I did). OR use pre-made pizza dough (Trader Joe's anyone?).

Buffalo Chicken Dip - as seen on The Bitten Word, who adapted it from Frank's Red Hot
8oz package of cream cheese, softened
1/4 cup ranch salad dressing
1/4 cup blue cheese salad dressing
1/2 cup buffalo sauce (I used Frank's Red Hot Buffalo Wing Sauce)
1/2 - 3/4 cup crumbled blue cheese (extra 1/4 cup for sprinkling on top of pizza after it get out of the oven)
1 cup chicken breast shredded or diced (We used the kind you buy at Costco - pre-cooked chicken strips)
1-2 stalks of celery, slivered
1 cup shredded mozzarella cheese (or an Italian blend, whichever you prefer)

Make your pizza dough. When the pizza dough is ready, shape your dough into the desired shape and pre-bake your crust at the recommended temperature (ours was 500 degrees) until just slightly golden brown and done in the center (about 6-8 minutes). Meanwhile, make your buffalo chicken topping in a large bowl by mixing cream cheese, salad dressing, buffalo sauce and 1/2 cup of blue cheese. Stir until combined. Stir in chicken. When crust is ready, pour buffalo topping over hot dough and bake until topping is heated through (about 6-8 minutes). Remove from oven and top with mozzarella cheese and put back into oven for a few minutes until fully melted. Top with slivered celery, remaining blue 1/4 cup blue cheese and drizzle some Buffalo sauce on top if desired. AND enjoy! :)

Note: Depending on your tastes and the ingredients on hand, you can use 1/2 cup ranch or blue cheese salad dressing rather than 1/4 cup of each.
